step 1: cut bacon strips in half and cook the bacon so it starts to crisp, but doesn’ t get stiff.....giggity
step two: wrap the bacon around a scallop and hold in place with a toothpick. the scallops i used were pretty big, about 15 per pound
step three, mix butter and brown sugar ina pan and get it hot
step four: stick the scallops into the butter and lightly brown on each side
step five: eat
shockingly my pickiest eater ate 3. my 2 y.o had 2 and my other daughter had 1 and was meh over it. I had 10.

Hot take: super crisp bacon sucks.
I like it when it’s cooked just enough so that when you pick it up it still holds it’s shape but it still has some chew rather than breaking into bacon shards.
That said, if we’re talking about slabs of pork belly then the crispy skin is an awesome extra.
